Welcome to Mint to Eat! I am so excited you are on my page. My name is Caroline Pruente and I am living that #RD2BE life. I am a graduate student at the University of Missouri in their Coordinated Program in Dietetics. On any given day, I could be sitting in a classroom, or teaching kiddos at a local park about MyPlate, counseling women at WIC, or at a local hospital making rounds.
This is me literally jumping for joy that I was one of fifteen students that got into the Dietetics Program.
When I am not running around Columbia, Missouri, for my rotations or studying for my next exam, I am at home cooking a new recipe or chit-chatting with my girlfriends or taking a spin class or planning my next adventure.
This is me in Lucca, Italy, biking around the old city wall. I
studied abroad in ate my way through Florence, Italy, in 2016 learning about sustainability and the Meditteranean diet.
One of my professors always reminds us that “we don’t know, what we don’t know, what we don’t know.” She is absolutely correct. And while I still have a lot to learn, I already have a few established beliefs about nutrition. For example, I am a firm believer in licking the brownie batter bowl, in sharing meals with good company, and in honoring our bodies’ hunger and cravings. And I am a firm believer that we are not only mint to eat, but mint to enjoy it too.
